AKIPRESS.COM - A traditional airag (kumis) of Mongolia has been listed as representative intangible cultural heritage of humanity of the UNESCO this year.
Airag is be ready after many times of beating the mix of horse milk and the source of airag reserved for just this for a whole season in hohuur (a traditional container (bag) made with cow hide in which airag is manufactured).
The main manufacturing technique of airag is milking mares, cooling fresh milk and repeatedly mixing it inside hohuur - more than 500 times - with buluur left inside to facilitate fermentation.
Hohuur and other tools are made by people with good knowledge and experiences necessary for preparing and composition of ferments.
